Back to Origin: the past, present and future of traditional cooking

The AGM 2024 gathered 20 members coming from 11 cities over 3 continents
Further than internal issues regarding the life and the future of our Network, the focus of the upcoming Délice Annual General Assembly in Merida, Mexico, from May 27th to 31st, 2024 was a question that any city is confronted with:

In our rapidly changing world, can traditional cooking and innovation exist together?

Traditional cooking connects us to our heritage, while innovation sparks creativity. Finding a balance is key. During the Assembly, Chefs, experts and Délice Network members discussed how to honour tradition while embracing new ideas.

Délice members and partners had the chance to participate to panels and workshops such as

  • How can we preserve traditional cooking over time?
  • The Keys for Preserving Traditional Cooking
  • The past present and future of traditional cooking: can traditional cooking coexist with innovation?

And many more.

 

Local food scene, gastronomic heritage and food justice projects
Participants also explored the local food scene, gastronomic heritage, and food justice projects. They drew inspiration from the rich culinary heritage of the Mayan culture, the heart of Merida's gastronomy. Visits to sustainable projects like Circulo 47 and Refettorio Merida showcased efforts to ensure equitable access to nutritious food for everyone, while preserving ancestral cooking, harvesting and farming traditions, as well as the environment for future generations.

 

Pueblos del Maiz project
Finally, a special emphasis was placed on the Project "Pueblos del Maiz" linking 4 Délice cities (Puebla, Tucson, Merida and San Antonio) around an essential local product: the corn. Together with local peers, Chefs coming from these cities have been invited for a unique Chef pairing around this common and important local ingredient.

Délice members had the chance to meet Chef Ryan Clark from Tucson, Chef Wilson Alonzo from Merida and many other protagonists of a vibrant local and international gastronomic scene.

 

Launch of the new Brand “The Food Capitals by Délice Network”

The Merida AGM was also the perfect occasion to officially launch "The Food Capitals by Délice" brand: after two years of strategic work with members, the brand and its logo are finally ready to be unveiled. 

This important event, marking a milestone in our Network's history, was officially launched in Merida with several journalists in attendance.

The brand aims to recognize cities committed to boosting their local food and gastronomy scenes, promoting them globally, encouraging collaboration with local communities and other members, and providing inspiration.

The event included a presentation by Network Executive Director, Elisabetta Bernardini, and a speech by Network President, Felipe Garcia. Their contributions were followed by a speech from the host city representative José Luiz Martinez and a Q&A session with journalists, emphasizing the brand's benefits for member cities.
